Melt In Your Mouth Peanut Butter Cookies




So I got this recipe from Simply Recipes Blog, which you can find a link to on the right.  I have never made Peanut Butter Cookies before and have tried several recipes on this website with success and decided to try again.  Wow!  Is all I can say.  You can make these cookies however you like, whether that is a little under done and soft or cooked a bit longer to make the edges crispy with a melt in your mouth middle.  I cooked them at 300 for about 15 minutes which made them so melt in your mouth, soft and chewy.  I also rolled them in white sugar prior to pressing them, to give them that extra sweetness I remember from childhood.  Hope you enjoy!

1/2 cup of each of the following: sugar, packed brown sugar, butter (at room temperature), peanut butter
1 egg
1 1/4 cup flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Cream the butter for 2 mins.  Add sugars and cream 2 more mins.  Mix in peanut butter and egg.  Mix together dry ingredients: flour, soda, powder, salf.  Stir into sugar/butter mix.
Wrap dough in plastic and refrigerate 3 hours or overnight.
Preheat oven to 375.  Shape into 1 1/4 inch balls.  Place approx 3 inches apart on ungreased sheet.  Flatten in a crisscross pattern, the true way to make a peanut butter cookie, and bake until light brown 9-10 minutes.  Cool for a minute and then transfer to a rack to completely cool.  

Makes 2 dozen.
